Alvarado, Ver., 6 de enero de 2017.- A más de 15 kilómetros del puerto de Veracruz se ubica Mandinga, municipio de Alvarado. Este pueblo con vocación pesquera colinda con una laguna de agua salobre en la que habitan especies que sirven como alimento para las familias. El ostión es el producto endémico de la región.
“Se le reparte a los restaurantes. Constantemente se están haciendo estudios para el ostión y sale bien, por eso seguimos adelante. Se le hacen estudios constantemente, vienen las autoridades y hacen los estudios, se los llevan, los analizan y pues realmente estamos bien”, dijo Francisco Alfonso Cabrera, presidente de vigilancia de la Sociedad Cooperativa de Pescadores.
Los integrantes de la Sociedad Cooperativa de Pescadores son especialistas en la materia. A las ocho de la mañana arrancan sus lanchas y se dirigen a los bancos de ostiones. Sin la ayuda de equipo de buceo se lanzan al agua y se sumergen en las profundidades.
“A veces profundidades de 5. 6 metros, máximo 7 metros, pero a veces en dos metros, un metro. Peligroso no es, porque en esta laguna no hay animales malos ni nada, la raya nada más, que hay que temerle un poco, que es un bicho que te pica, pero no hay muchas y son poquitas” dijo Francisco Alfonso Cabrera.
Al mediodía regresan con costales repletos. En ese momento inicia el proceso de desconche. Ahora sí, dicen ellos, el molusco se encuentra listo para venderse por costales, bolsas, en docenas o unidades. “Es un alimento muy sabroso que lo viene a buscar mucho la gente y si se vende, se vende por bolsitas de ostiones, se vende en costales, o sea, como lo quieres, si lo quieres así nada más pues lo abres y te lo comer así”.
Ya con el producto crudo inicia el proceso de preparación de uno de los platillos típicos de la región: los ostiones enchilpayados. Martha María conoce la receta.
En el sartén se coloca el molusco bañado en agua salobre de la laguna. A fuego intenso, esperamos a que se consuma el líquido. Después viene la cebolla, mayonesa, pimienta, chile chilpaya, con su respectivo toque de laurel y tomillo.
“Para cocerse el ostión son de 8 a 10 minutos, para que se cosa el ostión y para que se le agregue lo que es la pasta, el enchilpayado, tardaría 15 minutos el platillo en estar completamente (…) viene directamente de la laguna al plato como se le dice, viene 100 por ciento fresco”, detalló.
De la laguna al platillo. El ostión enchilpayado de Mandinga es la especialidad de la casa, sin embargo también se puede consumir en su concha, asado, en coctel, a la pimienta o al mojo de ajo.
